Cocktails in the garden weather has arrived! Enjoy our delicious Mad Hatters Martini cocktail for you to make at home with friends or family, or to relax and enjoy some 'me time'.

This cocktail will be served in a coupe glass, add ice to the glass and set it to the side to chill whilst you make your cocktail.

Add to your shaker:

  • 15ml Mathieu Teisseire Vanilla Syrup
  • 15ml Passion Fruit Puree
  • 75ml Pineapple Juice
  • 15ml Lime Juice
  • 35ml Grey Goose White Peach Essence & Rosemary Essence Vodka
  • 15ml Apricot Brandy

Add ice & shake

Remove the ice, double strain & serve! Option to add edible flowers to garnish.

Cook with us! Head Chef Donna Hughes has put together a delicious Marinated Rainbow Trout with Succotash and Salsa Verde recipe, perfect for cooking at home to wow dinner guests or for a date night.

(Serves 4)

INGREDIENTS:

4 FILLETS RAINBOW TROUT

100ML OLIVE OIL PLUS 2 TBSP MORE FOR COOKING

SUCCOTASH:

1 LEMON SLICED

2TSP GARLIC PUREE

½ RED ONION ROUGHLY DICED

400G SWEETCORN

200G CANNELINI BEANS

200G RED KIDNEY BEANS

200G BROAD BEANS

12 CHERRY TOMATOES HALVED

12 BABY POTATOES BOILED AND HALVED

1 SMALL PACKET OF DILL

LEMON JUICE

SALT AND PEPPER

SALSA VERDE:

½ SMALL PACK TARRAGON

1 SMALL PACK FLAT LEAF PARSLEY

2 GARLIC CLOVES

2TSP DIJON MUSTARD

3 TBSP SMALL CAPERS

150ML EXTRA VIRGIN OLIVE OIL

1TBSP SHERRY VINEGAR

METHOD:

MARINADE THE TROUT FILLETS OVERNIGHT WITH THE OLIVE OIL AND SLICED LEMON.

FOR THE SALSA VERDE:

FINELY CHOP THE HERBS AND GARLIC. ADD THE MUSTARD AND CAPERS AND COMBINE WELL. STIR IN THE OLIVE OIL. ADD THE SHERRY VINEGAR AND SEASON TO TASTE

FOR THE SUCCOTASH:

SWEAT THE RED ONION AND GARLIC PUREE IN 1 TBSP OIL THEN ADD THE CHERRY TOMATOES AND COOK UNTIL SOFT. ADD THE SWEETCORN, POTATOES AND BEANS AND HEAT THROUGH SLOWLY (CANNED BEANS WORK WELL FOR THIS DISH)

HEAT 1 TSP OIL IN A LARGE PAN. REMOVE THE TROUT FILLETS FROM THE MARINADE, SEASON AND PLACE SKIN SIDE DOWN IN THE PAN. FRY THE FILLETS FOR 1-2 MINUTES ON EACH SIDE UNTIL THEY ARE FULLY COOKED AND THE SKIN IS CRISPY.

ONCE THE SUCCOTASH IS HEATED ADD 1 TBSP CHOPPED DILL AND A SPLASH OF LEMON JUICE AND SEASON TO TASTE.

DIVIDE THE SUCCOTASH BETWEEN 4 BOWLS AND PLACE THE TROUT FILLETS ON TOP.

DRESS WITH THE SALSA VERDE AND SERVE.

Tell us a little about how you met & talk us through the proposal

Connor and I met in April 2012. I was living in Australia at the time, and I came home for a friend’s wedding. Connor had become friends with all our mutual friends while I had been living away. We met on Good Friday in Filthy McNasty’s. Connor hadn’t intended on being out as he had been out the night before and had a football match the next morning. However, upon getting to know me he decided to stay and later that night we had our first cheeky kiss. Unfortunately, I went back to Australia, but we kept in contact while I was away. Fast forward to August 2012 and I booked Connor a one way ticket to Melbourne to come join me. We then moved back home to Belfast in 2013. Connor took me to NYC in Jan 2017 as a 30th Birthday present. One night he decided to take me on a midnight walk in Central Park. When we got there, it was -4 degrees the ground was covered in snow and ice. We came to a bank by the lake in central park, the water was completely frozen over. Connor asked me to grab a stone to break the ice and as I turned round there was the big eejit on his knee with a ring and asked me to marry him. I initially laughed until he said “Hurry up my knees cold” and of course I said yes!!

Ceremony

We had a beautiful Humanist Ceremony with our amazing Celebrant Ciara Turley in the stunning Boat House ceremony room in the grounds of The Rabbit Hotel. We couldn’t recommend our celebrant enough Ciara is truly one beautiful lady and she made the whole ceremony so special and personalised. There wasn’t a dry eye in the room. The Boat House was just the most stunning location for our ceremony too, so cosy and beautifully decorated.

What made you choose The Loft to host your day?

When we finally decided to book our wedding and search for the perfect venue The Loft was top of our list. From initial contact the staff couldn’t be more accommodating from trying to schedule in a viewing time that would suit us and even on our first visit to The Loft. When we seen the space we just knew it was the perfect space for us. The room was so beautifully decorated that we didn’t need to do anything to it, this took that whole stress away from us. The wedding package they offered just had everything that we wanted to be included. The location of the venue was also perfect as it was close enough to Belfast and the airport for our guests to easily travel to and from. The whole place was just completely our vibe.

Favourite memory of your Wedding

The ceremony was highlight for us it was such an emotional and special moment that we got to share with all our closest friends and family. Also the food at the reception was absolutely outstanding, we’ve had so many comments from our guests about how good the food was. We also loved the attention to detail and help the staff gave us on our day from start to finish. Our hands were never empty without a drink! Special mention to Claire and Chloe who literally couldn’t have done anymore for us thank you so so much you girls are complete angels!

World Wellness Week | Açai Bowl


Galgorm Collection are celebrating World Wellness Weekend this September, which aims to inspire and empower people to make healthier choices and enjoy an active lifestyle with family & friends. The Rabbit Executive Chef Donna Hughes has shared a delicious and nutritional Açai Bowl recipe for you to enjoy making at home.

Ingredients

1 cup frozen berries

1 cup of frozen Açai purée

1 large ripe banana

1 cup of unsweetened almond milk or fruit juice

1 tbsp of nut butter

Add all ingredients into a blender and blend until you get a smooth texture, add more liquid if needed

For the Granola

175g of mixed nuts

1 Cup of dried berries

450g of rolled oats

50g sunflower seeds

125ml sunflower oil

100ml vegan honey

50g pumpkin seeds

Method

Pre heat the oven to 190 degrees

Chop up the nuts and leave some whole

Mix with the oats, sesame seeds, sunflower seeds, pinch of salt in a large mixing bowl

Pour in your honey & oil mixing it all together breaking up any clumps

Once complete place onto a baking tray and bake for 20 - 25 mins until golden

Let the mix cool and mix in the dried berries

Layer the açai mix and granola in a bowl and add your favourite dried or fresh fruit, nuts or seeds to garnish

Summer BBQ Tips


Argubly the best thing about summer is the al fresco get togethers and barbecuing to your heart's content. One of our Executive Chef's Aidan top tips for a great BBQ is boosting the flavour of your chosen meat with marinades and dry rubs, which you are best doing before cooking to get the most from the flavour. Check out our favourite recipes below for marinating!

 

 

House Rub Recipe

INGREDIENTS

  • 2 tsp fennel seeds
  • 1 tsp cumin seeds
  • 1 tsp whole black peppercorns
  • 1 tsp coriander seeds
  • 100g soft dark brown sugar
  • 50g caster sugar
  • 2tsp garlic powder
  • 100g table salt
  • 3tsp smoked paprika
  • 6tsp paprika
  • 1tsp dried oregano
  • 1 tsp cayenne

 

METHOD

1. Toast the fennel, cumin, coriander & back peppercorns in a dry pan over a medium heat for a few minutes, shaking the pan, until the spices release an aroma

2. Tip into a bowl and leave to cool

3. Use a pedestal and mortar to grind the spices to a coarse powder, combine with the remaining ingredients and mix thoroughly

 

 

Hot Sauce Recipe

INGREDIENTS

  • 1kg red peppers
  • 250g red chillies
  • 5g Maldon sea salt
  • 25ml cider vinegar
  • 25ml maple syrup
  • 25g garlic cloves

 

METHOD

1. Grill the peppers and chillies on the BBQ backening the skin all round. Place into a container with a lid and leave to cool. Peel the peppers and chillies, Discard the skins and as many seeds as possible, then put the flesh into a saucepan

2. Add the rest of the ingredients to the pan, bring to a simmer and cook over a low heat for 30 minutes

3. Put the mixture into a blender and blitz until well mixed but still a little chunky. Decant into a 500ml sterilized jar or bottle and refrigerate. The sauce will keep in the fridge for 1 week.

 

 

BBQ Sauce

INGREDIENTS

  • 25 ml vegetable oil
  • 1 white onion, peeled and grated
  • 1 garlic clove, peeled and grated
  • 25g Spice Mix (see below)
  • 125ml apple juice
  • 125ml cider vinegar
  • 135 ml maple syrup
  • 125mlFrench's mustard
  • 125ml treacle
  • 125ml apricot jam
  • 500ml Ketchup
  • 25g smoked Maldon sea salt

 

SPICE MIX INGREDIENTS

  • 5g fennel seeds
  • 5g cumin seeds
  • 5g coriander seeds
  • 5g celery seeds
  • 5g mustard seeds
  • 5g black peppercorns

 

METHOD

To make the spice mix, toast all the spices in a dry pan over a medium heat for a few minutes, shaking the pan until golden. Tip into a bowl and leave to cool. Blitz the toasted spices in a blender to a rough powder.

1. Heat the vegetable oil in a pan over a medium heat. Add the onion, garlic and spice mix and cook gently for 10 minutes, or until the onions are cooked through.

2. Add the apple juice and cider vinegar and simmer until reduced by a third

3. Add the remaining ingredients, bring to a simmer and continue to simmer for 5 minutes.

4. Blitz the sauce with an immersion blender, then pass it through a fine sieve. Pour into a 1 litre sterilized bottle. Once cool, store in the refrigerator and use within 2 weeks.

 

MORE BBQ TIPS

Preheat your BBQ

Whether you are using a gas or charcoal BBQ, ensure you leave enough time for it to get to cooking temperature before you actually need it.

Precook your meats

Works great if you have a large number of people to feed. Cook in a low oven, without colour and finish on the BBQ. Works great for tender pork or beef ribs

Prevent sticking to get those grill marks

Ensure the grill is hot enough before putting any food on it. As an extra trick rub the grill with a ½ raw potato. The starch will act as a temporary non-stick barrier.

Know your heat zones

BBQs will naturally have hotter and colder areas, and knowing where these are and what to cook on them will help your BBQ skills. Direct heat for searing, indirect heat for finishing cooking. The Shelf in the lid can be used to keep your food warm whilst you cook more.

Let your meat rest

Get a casserole dish with a lid, when you have finished cooking, put your meat in there and let it relax, this will help ensure it is tender. If you carve or start eating it before, it will be really tough in comparison to when it’s properly rested.

Don't run out of fuel

Seems like an obvious one, but make sure you have enough charcoal or gas in the tank before you start.

Clean up

Get into the habit of cleaning down the grill after you’ve finished will make it quicker to set up next time. Don’t worry about intense scrubbing, instead scrunch up some foil and rub it along the bars of the grill to get them clean and help keep them rust-free, too. Did you know? Half of a raw onion it will get any unwanted burnt bits off with ease!

We met in a nightclub in Belfast back in 2014 through our friends. After months of dating Nathan asked me to be his girlfriend and I panicked and said no, then changed my mind a week later and said yes (lol)! Who would have thought we would be married 9 years later. We went to Finnlough for an overnight in September 2021 and Nathan proposed that evening after dinner with candles, rose petals, bubbly and lots of photos of us and our daughter displayed. It was just perfect!

Favourite memory of your wedding day

It’s hard to choose one specific memory as the whole day was literally just amazing, which was mainly down to The Loft wedding planners and the staff who were so attentive. The food was also out of this world! Walking up the aisle surrounded by our nearest and dearest with Nathan waiting at the top was a big highlight for me. Also my first dance with my dad, he made a slideshow of photos from I was a child and went to a recording studio and sang a song which got recorded to play over the slideshow, it had everyone in tears!

We met through working in a cafe, we weren’t close at the start but after years of working together we realised we had a lot of similarities and became best friends! Baz asked me out on a date so we had our first date at titanic and it blossomed from there! For the proposal he took me out to my favourite restaurant and then back to our first date spot (titanic), got down on one knee and asked me to be his wife - the easiest yes ever!

What made you choose The Loft to host your day?

When we were venue hunting the loft really stood out to us because the staff were so lovely and couldn’t do enough to cater to your needs and make the day special! We had ideas about different food etc and Donna the chef was more than happy to cook different styles of cuisines to make our day special! The venue speaks for itself in terms of beauty, we had very little to do in terms of decorating as the venue is so stunning as it is! As well as that there are many rooms for the guests to stay over in and a fantastic spa to relax in the next day!

Favourite memory of your Wedding

Our favourite memory was sitting back at the top table and seeing that everything had come together and that our dream day had came true! There were so many great elements to the day but having our family and friends home from all around the world and all together was really special.

Tell us a little about how you met & talk us through the proposal

Thomas and Joanna met in London back in 2014 when working in the Savoy Theatre. Thomas was passing through in the middle of a midlife crisis, and Joanna was hard at work minding her own business, little did we know then but the show we were working on would influence the wedding venue we would get married at 8 years later. After a what could be described as a summer fling, and Thomas moving away to work somewhere else, we kept in touch and spent the best part of 5 years long distance before settling in Northern Ireland, so it was a good while before the proposal (in Joanna's opinion) but after a lovely snowy walk in Hillsborough Forest Park, Thomas had the ring in his pocket, bearing in mind at this point he had chickened out of asking the parents for permission. Turns out he would also chicken out on asking Joanna to marry him on the walk too, so he asked her later on that evening in bed, before the clock struck midnight, so he didn't have to ask Joanna on her birthday. 

Your Day, Your Way

Ceremony

Karen the celebrant was our celebrant for a humanist ceremony on site at The Rabbit. Karen gave us the most wonderful personal experience and shared our story to family and friends before a hand fastening where we literally tied the knot. A fun highlight was when the best man left the vows in the car and had to make a dash to the car park. 

What made you choose The Loft to host your day?

We saw The Loft as it was just starting to be a venue for weddings. We were shown around by Jemma and the venue was beautiful. From the moment we entered the doors we could feel it was a place we wanted our special day, but what sealed the deal was when we saw a painting of Dirty Rotten Scoundrels, it was the show we met on when working in the Savoy Theatre, we took that as a sign this was the venue for us. 

Favourite memory of your Wedding 

To pick a favourite moment from the wedding is a difficult choice and I'm sure it'll be diferent for the both of us. For Thomas, it was the food and getting a bloody good ripping into by the best man with his speech, oh and obviously getting to marry Joanna. For Joanna, apart from finally getting to marry Tom, was having all our friends and family together after covid and the moment we entered the reception room as a married couple, feeling all the love and joy throughout the whole room and feeling like a bit of a celeb.

Ceremony

We had our ceremony in the Boathouse lead by our pastor with all our closest family and friends.

What made you choose The Loft to host your day?

We loved the whole rustic, boho vibe of The Loft, including the banquet style tables. It was different from anywhere else we had seen and went with our own style perfectly.

Favourite memory of your Wedding

Our ceremony has to be the favourite part. The walk down the aisle, the tears from Jonathan and our laughs together.

I had a strong feeling he was going to propose, and he had a strong feeling I knew, so neither of us spoke a word the whole way there! It was a gorgeous location to get engaged & we drove into Dublin the following day to pick the ring!

The venue was beautiful. We had guests coming from all over the world so we wanted somewhere that was closeby to Belfast City that they could spend a couple of days to enjoy, and also had a fabulous location to stay in.

Tell us a little about how you met & talk us through the proposal

We initially started chatting on a dating app (the modern love story) but didn’t get together until months later when we both happened to be at the same bar – it was meant to be! On Boxing Day 2020, we went to our special place Finn Lough in Enniskillen. We had a lovely time at the spa and then when we got back to the relaxation room, there were rose petals and candles everywhere and our song was playing – this is where Les popped the question with the most beautiful ring and Megan of course said yes!

Your Day, Your Way

Ceremony

We had our ceremony in the Fern Room on 08.10.2022 – the beautiful Boathouse wasn’t quite ready yet but we did manage to get some photos in there afterwards. Megan’s dad walked her down the aisle to Emily-Rose Edgar singing “All About You” by McFly, and he then forgot to “give her away” and just sat down so that provided a few laughs for everyone! Our ceremony was beautiful – short and sweet with a reading of “Carrie’s Poem” by Megan’s niece, Eva. We signed the register to “Always Remember Us This Way” and then walked out to the most brilliant confetti throw with all of our guests – some of our favourite photos from the day!

What made you choose The Loft to host your day?

We knew The Loft was where we wanted to get married before we were even engaged. We went for a viewing with Jemma soon after Les had popped the question and booked that same day. It was everything we wanted and more for our special day.

Favourite memory of your Wedding

Honestly there are so many – it sounds cliché but it was truly the best day of both of our lives. We had booked a singing waiter as a surprise for our guests and almost everyone says this was their favourite part of the day – such a brilliant idea to wake everyone up again after the meal. We also loved the speeches with our loved ones and of course dancing the night away with DJ Magiggs – he definitely knew how to get everybody on to the dance floor. We also had the lovely S’mores and Snaps s’mores bar out on the terrace which was a big hit with everybody.

How did you meet and how did the proposal go?

Our friend Rachael match made us! She knew Scotty from school and set us up. Scott text me first, took me a few months to consider (ha!). Rachael knew Scotty and I would be a good match and she was right, funny enough not long after we got a job with a dating agency! The proposal was really cute, under a floral arch at our house, my mum and Scotty had worked hard to put lights and flowers on it a few weeks after my birthday. No photo evidence though as it was 9pm just after I got home from a 13 hour shift!

Your Day, Your Way

What made you choose The Loft to host your day?

There really wasn’t a question for me, I had seen The Loft online and I just knew it was perfect for us, luckily for me Scotty agreed upon viewing the venue. I loved everything about it, the décor, staff, absolutely everything was fantastic.

Favourite memory of your wedding

I would say when the ceremony doors opened and I could see everyone I love sitting together, and Scotty at the top of the aisle it was so magical. Scotty’s would be the moment his speech was over! He loved everything and would struggle to pick a favourite, but the food is high up there though!

Tell us a little about how you met 

We met years ago in a bar in Cookstown where I worked. Daniel was in one night and his friend started the conversation between us.

Talk us through the proposal

We went to London in January for my birthday and he proposed to me in our hotel room. He had planned on booking the London Eye but I told him I didn't want to go on it as there were big queues lol. (You can imagine how unorganised Daniel is).

What made you choose The Loft to host your day?

I had seen The Loft online and I thought the images looked too good to be true. It was the first (and only) venue that we looked at and when we saw it in person I was blown away by how beautiful it was. Maureen was so welcoming and gave me so much information and guidance as I hadn't a clue where to start with wedding planning. I couldn't imagine having our day anywhere else. It was perfect.

Favourite memory of your Wedding Day

Sitting down to dinner, finally relaxed after the chapel nerves, photos etc and just taking it all in. All our favourite people there and such a beautiful setting.

How was your Wedding Planner?

Absolutely fantastic. I cannot thank Maureen enough for all she has done. Nothing was ever any bother. She made planning my day so enjoyable!
