So, how did you two meet? Give us the real story!

We first met in school. He went to carrick grammar and I went to carrick college. Met through mutual friends! Life moves on, uni etc then we actually started talking again via tinder! Haha 

Spill the tea on the proposal — how did it all go down?

We had not long moved into our home together and decided to book a wee Christmas night away in a wee small cabin with a gorgeous log fire! Andrew proposed to me there… 22/12/2020

What made The Loft 'THE' place for your big day?

From the minute we stepped into The Loft for our viewing I got chills. I actually nearly cried! I just knew this was the place. The decor, the whole layout of the room. Just everything was perfect. 

Any standout moments that still gives you butterflies?

The fact that our guests still talk about our wedding and comment on how stunning the venue was. The food…they still talk about the food! It all just makes me so happy and proud! 

Which of our wedding planners helped bring your vision to life and how was working with them?

Beth! We actually had a few planners but due to them leaving and also maternity our wedding was handed over to beth. Beth was amazing! She made everything seem so straight forward and made everything feel calm and at ease! Her communication was also amazing! 

Got any advice for future couples — especially those tying the knot at The Loft?

Cliche but take it ALLLL in. It goes by so fast. I’d actually love someone I know to get married there so I can experience the wedding venue from a guests point of view

Summer has officially entered the group chat and so has our brand new Cocktail of the Month, the Rogue Smuggler. It’s bold. It’s fresh. It’s got just enough bite to keep things interesting. Basically, it’s your summer in a glass.

Whether you're poolside, lakeside or just soaking up the sun on our terrace, this cocktail was made for golden hour sipping!

What’s Inside?

A globe-trotting mix of ingredients that hits all the right notes:

  • 35ml Copeland Smugglers Rum
  • 15ml Regal Rogue Red Vermouth
  • 10ml Yuzu Saké 
  • 40ml Cranberry juice
  • 10ml Sugar syrup
  • Topped with London Essence Peach & Jasmine Soda
  • Orange peel and a sprig of thyme to garnish
How it’s made:
  • Add all the ingredients to your shaker - hold the soda
  • Shake with ice, like your first playlist of summer depends on it
  • Strain into a chilled tall glass
  • Top with that dreamy Peach & Jasmine fizz
  • Garnish with orange peel and thyme — then snap a pic

Tell us a little about how you met & talk us through the proposal

Connor and I met in April 2012. I was living in Australia at the time, and I came home for a friend’s wedding. Connor had become friends with all our mutual friends while I had been living away. We met on Good Friday in Filthy McNasty’s. Connor hadn’t intended on being out as he had been out the night before and had a football match the next morning. However, upon getting to know me he decided to stay and later that night we had our first cheeky kiss. Unfortunately, I went back to Australia, but we kept in contact while I was away. Fast forward to August 2012 and I booked Connor a one way ticket to Melbourne to come join me. We then moved back home to Belfast in 2013. Connor took me to NYC in Jan 2017 as a 30th Birthday present. One night he decided to take me on a midnight walk in Central Park. When we got there, it was -4 degrees the ground was covered in snow and ice. We came to a bank by the lake in central park, the water was completely frozen over. Connor asked me to grab a stone to break the ice and as I turned round there was the big eejit on his knee with a ring and asked me to marry him. I initially laughed until he said “Hurry up my knees cold” and of course I said yes!!

Ceremony

We had a beautiful Humanist Ceremony with our amazing Celebrant Ciara Turley in the stunning Boat House ceremony room in the grounds of The Rabbit Hotel. We couldn’t recommend our celebrant enough Ciara is truly one beautiful lady and she made the whole ceremony so special and personalised. There wasn’t a dry eye in the room. The Boat House was just the most stunning location for our ceremony too, so cosy and beautifully decorated.

What made you choose The Loft to host your day?

When we finally decided to book our wedding and search for the perfect venue The Loft was top of our list. From initial contact the staff couldn’t be more accommodating from trying to schedule in a viewing time that would suit us and even on our first visit to The Loft. When we seen the space we just knew it was the perfect space for us. The room was so beautifully decorated that we didn’t need to do anything to it, this took that whole stress away from us. The wedding package they offered just had everything that we wanted to be included. The location of the venue was also perfect as it was close enough to Belfast and the airport for our guests to easily travel to and from. The whole place was just completely our vibe.

Favourite memory of your Wedding

The ceremony was highlight for us it was such an emotional and special moment that we got to share with all our closest friends and family. Also the food at the reception was absolutely outstanding, we’ve had so many comments from our guests about how good the food was. We also loved the attention to detail and help the staff gave us on our day from start to finish. Our hands were never empty without a drink! Special mention to Claire and Chloe who literally couldn’t have done anymore for us thank you so so much you girls are complete angels!

Coconut & Passionfruit Panna Cotta


This is not your average dessert. Our Passionfruit & Coconut Panna Cotta is smooth, creamy and bursting with tropical vibes. Think silky coconut layers topped with a zingy passionfruit jelly — refreshing, light and totally drool-worthy.

It’s the kind of dessert that feels fancy but is super simple to make. Perfect for BBQs, dinner parties or just when you want something a little extra.

Trust us, you’ll want to make this on repeat all summer.

 

Passionfruit & Coconut Panna Cotta - Serves 7

Ingredients 
  • 500g of coconut purée
  • 250ml of coconut milk
  • 100g of caster sugar
  • 3 gelatine leaves, soaked in cold water

 

Method
  • In a saucepan, combine the coconut purée, coconut milk and sugar. Gently bring the mixture to a boil over medium heat, stirring occasionally, until the sugar has fully dissolved.
  • Remove the pan from the heat and allow the mixture to cool slightly. Once cooled a little, stir in the soaked gelatine until fully incorporated.
  • Carefully pour the mixture into your chosen serving glasses or moulds.
  • Transfer to the refrigerator and chill until set and firm.

 

Passionfruit Jelly

Ingredients 
  • 500ml passionfruit puree
  • 4.5 gelatine leaves 
  • 900g caster sugar

 

Method 
  • Soak the gelatine leaves in cold water until soft.
  • In a small saucepan, gently heat the passionfruit purée and sugar, stirring until the sugar has fully dissolved.
  • Remove from the heat and stir in the softened gelatine until completely melted and incorporated.
  • Allow the mixture to cool to room temperature. Important: Do not pour the jelly while it’s still warm, as this can melt the top layer of the panna cotta and cause it to blend rather than form a clean layer.
  • Once cooled, carefully spoon a thin layer (about 2 tablespoons) over each set panna cotta. Return to the fridge and chill until the jelly layer is firm.

Alan and I met when I was 18 and Alan was 21 but were friends long before then with mutual friends. We booked to go to Las Vegas & Mexico in August 2020 but due to lockdown our trip was cancelled so we ended up doing a long weekend at the most amazing Air BnB on the Red Lion Road in October 2020, on the Saturday we went out to do some of the walking trails at Gosford Forest Park and just as we approached the castle, Alan got down on one knee and I cried my heart out before eventually saying yes… The engagement bubble was fab!

Ceremony

We had our wedding ceremony in The Boathouse, it is such a beautiful space for a ceremony. We wanted a religious ceremony but also wanted to keep everything in the one place due to family travelling from near and far so we were so thankful to be able to do this at The Rabbit.

What made you choose The Loft to host your day?

We wanted a venue that would give us the WOW factor. We decided to do a viewing at The Rabbit and we're so glad we did as the minute we walked in, we had that WOW we'd been waiting for, we booked and paid our deposit within the week!

Favourite memory of you wedding day

We honestly has the best day so picking one favourite memory is difficult, but I definitely think it was the alone time with eachother over a pint of outcider before being introduced into The Loft as Mr & Mrs Russell.

The Rabbit Hotel & Retreat Burrows into New Beginnings with a £2.5 Million Expansion


Best place to stay in Northern Ireland’ confirms December opening date for new accommodation which will create 14 new jobs.

The Rabbit Hotel & Retreat in County Antrim has invested £2.5 million to expand its stylish guestrooms to enhance the property’s awarding winning facilities.

The boutique hotel, named as the ‘Best Place to Stay’ in Northern Ireland for 2024 by The Times and Sunday Times, unveiled the detailed internal and external plans for 17 new guestrooms, at an exclusive behind the scenes visit by the Mayor of Antrim and Newtownabbey Borough Council, Councillor Neil Kelly.

The stylish new guestrooms, which are part of a new courtyard of accommodation, will blend seamlessly into the hotel’s picturesque grounds, complementing The Rabbit’s existing 33 guestrooms and offering an elevated guest experience that is sure to impress.

The opening of the 17 new bedrooms, scheduled to welcome their first guests from 6 December, will result in 14 additional jobs, bringing The Rabbit’s total workforce to 150.

We met in a nightclub in Belfast back in 2014 through our friends. After months of dating Nathan asked me to be his girlfriend and I panicked and said no, then changed my mind a week later and said yes (lol)! Who would have thought we would be married 9 years later. We went to Finnlough for an overnight in September 2021 and Nathan proposed that evening after dinner with candles, rose petals, bubbly and lots of photos of us and our daughter displayed. It was just perfect!

Favourite memory of your wedding day

It’s hard to choose one specific memory as the whole day was literally just amazing, which was mainly down to The Loft wedding planners and the staff who were so attentive. The food was also out of this world! Walking up the aisle surrounded by our nearest and dearest with Nathan waiting at the top was a big highlight for me. Also my first dance with my dad, he made a slideshow of photos from I was a child and went to a recording studio and sang a song which got recorded to play over the slideshow, it had everyone in tears!

Mango Caipirinha | April Cocktail of the Month


As the days grow longer and the promise of spring lingers in the air, we’re brightening up your glass with a tropical twist on a Brazilian classic. Introducing our Mango Caipirinha – The Rabbit Hotel’s cocktail of the month for April.

 

Bursting with zesty lime, sweet mango, and the bold kick of Cachaça, this vibrant cocktail is the perfect sip to welcome warmer days. Whether you're joining us at the bar or mixing it up at home, here’s how to bring a taste of sunshine to your glass.

 

Ingredients:
  • 50ml Cachaça
  • 4 lime wedges (muddled)
  • 1 demerara sugar cube
  • 35ml mango purée
  • 10ml mango syrup

 

Method:
  • Place one cube of demerara sugar into a Boston shaker.
  • Pour 50ml of Cachaça over the sugar cube.
  • Gently muddle the sugar until dissolved.
  • Add four fresh lime wedges and muddle again to release their juice.
  • Add the mango purée and mango syrup.
  • Fill the shaker with ice and shake vigorously until well chilled.
  • Pour (or “dump”) the contents into a whiskey glass.
  • Garnish with a slice of fresh mango.

Tell us a little about how you met & talk us through the proposal

We met at work in 2015 and officially started “going out” in February 2016. We bought our house together in Portrush in 2018, survived a pandemic and got a puppy (Jax, a Soft Coated Irish Wheaten Terrier) before getting engaged in June 2021. It was the evening before my 28th birthday and we went for a walk with Jax as we normally do, although Roo said we were going for a picnic for my birthday which was the reason for the large backpack he was carrying. We walked along Whiterocks beach and up to the bench that overlooks the coast alongside the fifth green at Royal Portrush Golf Club (Roo has been a member since he was child and I have followed many rounds of golf here)! Roo set out an M&S picnic and a bottle of champagne (which I thought was a bit much as it wasn’t a big birthday, but I wasn’t complaining)! When I was mid breadstick and hummus, I looked round to see Roo down on one knee as the sun started to set, Jax was sitting beside him totally oblivious as to what was going on! Restaurants and bars had only just opened again after lockdown the weekend prior so we were able to celebrate properly in the weeks after!

Ceremony

We had our ceremony onsite in The Boat House, very fitting as Roo is a volunteer RNLI crew member. A friend of ours conducted the ceremony which added a lovely personal touch and put us at ease. We knew we wanted a short ceremony as we were keen to make the most of the day with all our guests.

What made you choose The Loft to host your day?

The venue is just stunning, we were already sold on the venue before viewing it just from pictures alone, but the team were also so helpful and lovely which was a bonus. We knew we wanted a venue with accommodation onsite but didn’t want a typical hotel or function room style wedding. The Loft was just perfect, and the banquet tables and décor of the room sold it for us, everything was just so easy too. Shoutout to our lovely wedding planner, Claire Graham, for her help on the lead up!

Favourite memory of your Wedding

Spending time with our friends and family! We also loved to be able to stay at the venue for 3 nights, getting ready there that morning and having a day two BBQ with some time to relax in the Spa too. We can’t wait to go back again.

Rum Rabbit Rum!


Check out our cocktail of the month! Rum Rabbit Rum is the perfect cocktail for spring time, enjoy at home or in the garden as the weather gets warmer!

Ingredients:

  • 35ml Caribbean Rum
  • 15ml crème de mure
  • 20ml peach syrup
  • 35ml pineapple juice
  • 15ml lemon juice
  • 75ml white peach and jasmine soda

Method:

  • Grab your Gin Goblet glass & chill with ice
  • Taking a Boston shaker and add all the ingredients apart of the soda, add ice
  • Shake firmly for 5 - 10 seconds, with the smaller tin closest to you
  • Remove ice from goblet gin glass and stir in the cocktail, add some fresh ice
  • Top up with the soda.
  • Garnish with pineapple and blackberries (optional)

We were high school sweethearts, we met in second year before hitting it off in third year. We got engaged on our second trip to Paris after we both fell in love with the city first time round. Brian proposed with a sunrise breakfast overlooking the Eiffel Tower, followed by a private river seine boat trip, and ending with a romantic dinner at a beautiful restaurant watching the twinkling lights of the Eiffel tower above us. A day we will always remember.

Ceremony

We had our ceremony in the beautiful Boathouse. We dreamt of a relaxing, personal ceremony and that is exactly what we got due to this wonderful space and the amazing Chloe Cairns (@chloecairns.thecelebrant).

What made you choose The Loft to host your day?

The venue search was very short for us, I found The Loft on social media while on night duty. Brian woke up to a number of text messages at 4am, “I’ve found our venue”. A viewing was made for that weekend and as soon as we walked into The Loft we both knew it was perfect for us. It was exactly what we wanted from a venue, it ticked all our boxes. The Wedding team at The Rabbit made the process so easy and enjoyable and were always on hand to offer their help and advice and guide you through the process.

Favourite memory of your Wedding

We have so many wonderful memories from our wedding day but one of our favourites has to be having our wee dog at our ceremony. When we found out that The Rabbit was a dog friendly hotel it was the cherry on top. They were more than happy for her to part of our special day and were so accommodating in making this happen. She ran up the aisle towards us when we were pronounced as husband and wife which made for some amazing photos that we will have forever. It meant so much to us and it topped of an amazing ceremony.

Tell us a little about how you met

We met online in 2007 over a shared love of music. Aoife posted a photo with a band online and Andy commented on it, having also met the band. A friendship was formed and we chatted regularly, getting to know each other on MSN until we met in person months later to go to a concert together in Dublin. We maintained a long distance relationship for 5 years until Aoife moved North in 2012, so our life together could begin. 

Talk us through the proposal

We got engaged on the edge of Lough Hyne in Co. Cork on our 9 year anniversary. We were at the lake as we were taking part in a night time kayak tour to see the bioluminescence in the water under starlight. We arrived early to take some photos and for Andy to set up a timelapse video of the sunset. This of course was the perfect excuse to capture the whole proposal on camera! Even though it was our anniversary, Aoife was not expecting a proposal at all!

What made you choose The Loft to host your day?

We had visited many locations around Northern Ireland, searching for the perfect place. Although there are lots of lovely venues (and we even had our date held for another!) it is true what they say…when you find the one, you just know.

It was important to us that our venue have a unique and quirky feel, while still maintaining a high standard. We wanted a venue where we could hold the ceremony on site, and have many guests stay too. The Rabbit Hotel ticked all the boxes (and extra boxes too, a.k.a. the spa!) We fell in love with the Loft and the Fern Room as soon as we saw them.

Even though the Loft was essentially a building site at the time, we could tell by the detail and level of finish in the Fern Room that the Loft would be spectacular. We trusted the artist plans, and Abby did a great job helping us to visualise the space. We were buzzing with excitement on the car ride home from our first visit, and that’s when we truly knew we had found our perfect venue.

Favourite memory of your day

There are so many amazing moments from our day! Our beautiful humanist ceremony in the Fern Room, stealing a few quiet moments together away from the crowds, and dancing the night away with our friends and family.

How was your Loft Wedding Planner?

Abby was absolutely incredible every step of the way. She helped guide us through the planning process and informed us on all we needed to know and decisions we needed to make. We felt we could contact Abby with anything, no matter how big or small, and she would get back to us right away. Her bubbly personality and professionalism were exactly what we needed to help us plan our big day.

Were there any challenges along the way?

Honestly there wasn’t anything too difficult to plan, we had done our research and had a great team at the Loft to help us along the way when needed. Our most difficult part was the week leading up to the wedding, waiting to hear about changes in restrictions, having guests testing positive and having to change our wedding band 3 times!

Top Tips?

Don’t sweat the small stuff! you can’t control every single thing, so just focus on what’s truly important to you and the rest will fall into place. Oh and also get 2 fake tiers in your wedding cake, lest you’ll be eating cake for every meal for a month (learned that one the hard way.)
